I really dislike bland chicken, I need it to be cooked thoroughly and flavorful. I also struggle to plan the time to marinade chicken and gather the ingredients to ensure the chicken has adequate flavor.Therefore, I have been trying just about any chicken seasoning packet I can find. Some have been winners (I will share), and others are blah. The chicken seasoning in this chicken burrito bowl with rice and beans has been a major winner. The brand of seasoning is A Dozen Cousins and I also use their Mexican rice seasoning sauce and refried beans in this recipe.

My husband and I love rice bowl. Chipotle happens to be one my husband’s favorite restaurants so he loves any burrito bowl situation. We love rice, a protein, veggie, and maybe something extra to spice it up. That is the meal “template” for most of our dinners and lunches. It is a very easy way to meal prep since everything can go in one container all mixed together and you hit all the major food groups – yay health!

I am certainly no chef, but I am proud of this rice bowl and I know you will too. This chicken burrito bowl with rice and beans is full of flavor, requires only 6-9+ ingredients (depending on much pizzaz you like), and that includes water! Chicken Burrito Bowl with Rice and Beans

Ingredients

  • Approx. 1.5 lb of boneless, skinless chicken breasts
  • A Dozen Cousins – Mexican Pollo Asado seasoning sauce
  • 1 cup of white rice
  • A Dozen Cousins – Mexican Red Rice seasoning sauce
  • water according to rice seasoning directions
  • Frozen Roasted Corn (I LOVE the Trader Joe’s)
  • A Dozen Cousins – refried beans
  • 1 Avocado sliced (optional)
  • sour cream to top (optional)
  • chopped onions (optional)

Directions:

  1. Use a packet of A Dozen Cousins – Mexican Pollo Asado seasoning sauce to coat your chicken breasts, and refrigerate according to the seasoning packet. I like to cut my chicken into bite sized chunks for more favor per bite and less cooking time.
  2. While your chicken is marinating, chop any vegetables you plan on adding to your bowl such as onions.
  3. Take the chicken out of the fridge and either cooke according to the directions on the seasoning packet or Airfry at 400 degrees for approx. 15 minutes – this is my preferred method.
  4. While the chicken is cooking, use rice seasoning packet to make rice according to packet instructions, I like to use the rice cooker. Heat up your frozen corn on the stove. Heat up your beans in the microwave according to instructions. Cut avocado for serving.
  5. Once the chicken is cooked through and the rice, corn, and beans are heated, you can plate your meal. I start with rice, chicken, beans, corn, then top with avocado, sour cream and sometimes onions. Enjoy!!
